Greek Stuffed Mushrooms

Ingredients

- 1 (10 ounce) package frozen chopped spinach
- 1 cup crumbled feta cheese
- 1/3 cup finely chopped green onion
- 1/2 cup chopped fresh parsley
- 1 clove garlic, minced
- 2 teaspoons fresh lemon juice
- 1/4 cup pine nuts
- 12 large mushroom caps
Recipe
- 1 preheat oven to 350 degrees f.
- 2 cook spinach according to package directions; drain well, squeezing dry.
- 3 mix together spinach, feta, green onions, parsley, garlic, and lemon juice, stirring well.
- 4 place clean mushroom caps in baking dish or ovenproof casserole.
- 5 spoon mixture into mushroom caps; sprinkle pine nuts over tops.
- 6 bake, uncovered, at 350 degrees f.
- 7 ,for 10-15 minutes.
- 8 serve warm.
