Chilled Orange And Fennel Salad

Ingredients
- Servings: 8
- 8 small seedless oranges
- 1/2 cup vegetable oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 head romaine lettuce, shredded
- 2 medium sweet onions, very thinly sliced
- 1 fennel bulb, cut into 1/4 inch rings
Recipe
- 1 peel oranges, removing all of the pith. cut oranges into 1/4 inch slices.
- 2 in a small bowl, whisk together oil, vinegar, cumin, and chili powder. set dressing asside.
- 3 spread a layer of shredded romaine on a large serving platter. cover with a layer of orange slices.
- 4 cover liberally with onion slices. top with fennel rings.
- 5 spoon dressing over the salad. serve chilled.
