Chocolate Ginger Cake

Ingredients
- 1/4 cup butter
- 1/3 cup molasses
- 1/2 cup brown sugar
- 1 cup flour
- 1 1/2 teaspoons ground ginger
- 1 teaspoon cinnamon
- 1 1/2 teaspoons baking soda
- 2/3 cup milk
- 1 egg, beaten
- 4 baker's dark chocolate squares, in small pieces
Recipe
- 1 optional: place baker's chocolate at room temperature several hours in advance to make the chopping easier.
- 2 preheat oven to 300.
- 3 put butter, sugar and molasses into a medium pot and stir over low heat until butter has melted. chop chocolate into small pieces (not too small - spare yourself the trouble as they melt anyhow) while watching the pot. turn off heat once butter has melted and ingredients in pot have blended.
- 4 add flour, spices and baking soda to pot, and stir well.
- 5 add milk, egg and chocolate and stir until smooth.
- 6 pour into greased 9 inch square glass pan.
- 7 bake 50/55 minutes, until knife inserted in middle comes out clean. enjoy with fresh whipped cream!
