Fat-free Fettuccine Alfredo

Ingredients

- 1 (5 ounce) can evaporated skim milk
- 1 teaspoon cornstarch
- 8 ounces fat free cream cheese
- 1/2 lb mushroom, sliced
- 6 scallions, chopped
- 1 lb fettuccine
- salt and pepper
Recipe
- 1 mix 1 teaspoon cornstarch and 1 teaspoon skim milk in a saucepan.
- 2 add the rest of the skim milk and bring to a boil.
- 3 lower heat to medium and slowly add the cream cheese, stirring constantly.
- 4 simmer mixture until thick.
- 5 add salt and pepper.
- 6 saute mushrooms and scallions in a nonstick skillet sprayed with cooking spray.
- 7 cook fettucini according to package directions.
