Fattigmans Bakkelse (norwegian Christmas Cookies)

Total Time: 1 hr Preparation Time: 1 hr

Ingredients

  • 6 egg yolks
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 2 -3 teaspoons cognac
  • 1/2 cup heavy cream
  • 2 1/2 cups flour, plus additional flour for working
  • 1 teaspoon cardamom
  • vegetable oil (for frying)
  • powdered sugar

Recipe

  • 1 beat egg yolks, sugar and salt in a large bowl until thickened.
  • 2 beat in cognac & heavy cream.
  • 3 stir in flour & cardamom until dough forms. knead dough on floured work surface. cover & chill 4-8 hours.
  • 4 heat vegetable oil in deep fryer to 365 degrees. roll dough out on floured work surface. do this a little at a time and very thinly.
  • 5 cut dough into strips, then into diamonds 2x4".
  • 6 cut vertical slit in middle of each diamond and "thread" one end through slit.
  • 7 fry cookies a few at a time. flip as they rise to surface and cook until golden and lightly puffed.
  • 8 drain on paper towels & let cool. sprinkle with powdered sugar & serve.
