French Herbed Chicken

Ingredients
- Servings: 4
- 2 tablespoons shortening
- 3 lbs chicken
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup chopped carrot
- 1 clove of minced garlic
- 2 tablespoons minced parsley
- 3/4 teaspoon thyme
- 1 cup sauterne wine
- 2 stalks of sliced celery
- 1 (2 ounce) can of undrained sliced mushrooms
- 1 medium bay leaf
Recipe
- 1 melt the shortening in a large skillet.
- 2 sprinkle the chicken with salt and pepper; brown on both sides in the hot shortening.
- 3 remove chicken, and place it in a lightly greased shallow 2 quart casserole dish.
- 4 drain the excess shortening from the skillet and add the carrots, garlic, parsley and thyme.
- 5 cook over low heart till the carrot is tender.
- 6 add the carrot mix and remaining ingredients.
- 7 cover and bake at 350 degrees or until done to your preference.
