French Herbed Chicken

Total Time: 1 hr 30 mins Preparation Time: 30 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 2 tablespoons shortening
  • 3 lbs chicken
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup chopped carrot
  • 1 clove of minced garlic
  • 2 tablespoons minced parsley
  • 3/4 teaspoon thyme
  • 1 cup sauterne wine
  • 2 stalks of sliced celery
  • 1 (2 ounce) can of undrained sliced mushrooms
  • 1 medium bay leaf

Recipe

  • 1 melt the shortening in a large skillet.
  • 2 sprinkle the chicken with salt and pepper; brown on both sides in the hot shortening.
  • 3 remove chicken, and place it in a lightly greased shallow 2 quart casserole dish.
  • 4 drain the excess shortening from the skillet and add the carrots, garlic, parsley and thyme.
  • 5 cook over low heart till the carrot is tender.
  • 6 add the carrot mix and remaining ingredients.
  • 7 cover and bake at 350 degrees or until done to your preference.
