French Onion Soup

Ingredients
- Servings: 8
- 3 large onions, sliced
- 3 tablespoons butter
- 1 tablespoon oil
- 3 tablespoons sugar
- 2 tablespoons flour
- 5 (16 ounce) cans beef broth
- 2 (16 ounce) cans water (use broth cans)
- 1/4 cup port wine
- 3/4 cup burgundy wine
- salt and pepper, to taste
- 1 cup swiss cheese, shredded
- 1/2 loaf french bread, sliced
Recipe
- 1 in a large pot melt butter with oil over med-high heat, add onions and cook until translucent, 12-15 minute.
- 2 add flour and sugar and cook for 1 minute.
- 3 add broth, water, salt and pepper. simmer for 30 min and stir in wine. simmer for 2 more hours.
- 4 preheat broiler. pour soup into oven safe crocks, top with a piece of bread and top with cheese.
- 5 place on pan in case of spillage and broil for a few minutes until cheese is bubbly.
