Coconut Curry Pumpkin Soup

Ingredients

  • Servings: 6
  • 1/4 cup coconut oil
  • 1 cup chopped onions
  • 1 clove garlic, minced
  • 3 cups vegetable broth
  • 1 teaspoon curry powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground coriander

  • 1 (15 ounce) can 100% pure pumpkin
  • 1 cup light coconut milk

  • 2 teaspoons dried rosemary, chopped
  • 1 cup dried cranberries
  • 1 1/3 cups chicken broth
  • salt and pepper to taste

  • 2/3 cup sour cream
  • 2 cups all-purpose flour

  • 3/4 teaspoon salt
  • 3 cups confectioners' sugar, or as needed
  • 1/2 cup butter at room temperature
  • 3 tablespoons irish cream liqueur (such as baileys®), or as needed
  • 8 ounces bittersweet chocolate, coarsely chopped
  • 2/3 cup heavy cream
  • 2 tablespoons butter at room temperature

kelli's fried green zucchini

southern style banana split cake

  • 3/4 cup white sugar
  • 1/4 pound butter, melted
  • 2 (8 ounce) packages cream cheese

  • 4 bananas, sliced

  • 1 (16 ounce) container frozen whipped topping, thawed
