Cheese Omelette (omelette Au Fromage)

Total Time: 8 mins Preparation Time: 5 mins Cook Time: 3 mins

Ingredients

  • Servings: 2
  • 4 extra large eggs
  • fine salt, to taste
  • fresh ground black pepper, to taste
  • nutmeg, freshly ground, to taste
  • 1 ounce parmesan cheese, grated
  • 2 tablespoons butter
  • 2 ounces gruyere cheese, grated

Recipe

  • 1 break the eggs into a bowl.
  • 2 season to taste with salt, pepper, and nutmeg.
  • 3 add parmesan cheese.
  • 4 beat the eggs with a fork until just mixed.
  • 5 heat a large frying pan over medium heat.
  • 6 add the butter and allow it to melt and color slightly.
  • 7 add the beaten eggs.
  • 8 use the flat side of the fork to stir the eggs until they start to set.
  • 9 smooth the top and leave the eggs to cook.
  • 10 add the gruyere cheese over the surface.
  • 11 fold the omelette into thirds and flip it onto a heated serving plate.
