Cheese Omelette (omelette Au Fromage)

Ingredients

- 4 extra large eggs
- fine salt, to taste
- fresh ground black pepper, to taste
- nutmeg, freshly ground, to taste
- 1 ounce parmesan cheese, grated
- 2 tablespoons butter
- 2 ounces gruyere cheese, grated
Recipe
- 1 break the eggs into a bowl.
- 2 season to taste with salt, pepper, and nutmeg.
- 3 add parmesan cheese.
- 4 beat the eggs with a fork until just mixed.
- 5 heat a large frying pan over medium heat.
- 6 add the butter and allow it to melt and color slightly.
- 7 add the beaten eggs.
- 8 use the flat side of the fork to stir the eggs until they start to set.
- 9 smooth the top and leave the eggs to cook.
- 10 add the gruyere cheese over the surface.
- 11 fold the omelette into thirds and flip it onto a heated serving plate.
