Curry Roast Chicken

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 1 5/8 kg chicken, cleaned and dried
  • 4 slices lemon zest (thick slices)
  • 40 g butter, softened
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon chili powder
  • 1 teaspoon ground black pepper

Recipe

  • 1 preheat oven to 180 deg c (350 deg f).
  • 2 put the lemon zest in the chicken cavity.
  • 3 in a small bowl combine all the remaining ingredients. rub the butter blend all over the chicken.
  • 4 place the chicken on a rack in a pan/baking dish and bake, basting regularly, for 45 minutes to an hour (until juices run clear).
