Greek Potato Garlic Dip

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • 1/2 potato, boiled
  • 2 garlic cloves, crushed
  • 1/2 teaspoon salt
  • 3 tablespoons almonds
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • 3/4 tablespoon vinegar

Recipe

  • 1 boil potato.
  • 2 soak almonds in hot water for 15 minutes.
  • 3 drain.
  • 4 remove skin from the almonds.
  • 5 combines the garlic, salt, almonds, and oil in a food processor.
  • 6 blend into a paste.
  • 7 add potato, water, lemon juice and vinegar to the garlic-almond paste.
  • 8 blend again.
  • 9 season with pepper.
  • 10 check seasoning.
  • 11 remove to a serving bowl.
  • 12 serve cold or at room temperature.
