Greek Potato Garlic Dip

Ingredients
- 1/2 potato, boiled
- 2 garlic cloves, crushed
- 1/2 teaspoon salt
- 3 tablespoons almonds
- 2 tablespoons extra virgin olive oil
- 2 tablespoons water
- 1 tablespoon lemon juice
- 3/4 tablespoon vinegar
Recipe
- 1 boil potato.
- 2 soak almonds in hot water for 15 minutes.
- 3 drain.
- 4 remove skin from the almonds.
- 5 combines the garlic, salt, almonds, and oil in a food processor.
- 6 blend into a paste.
- 7 add potato, water, lemon juice and vinegar to the garlic-almond paste.
- 8 blend again.
- 9 season with pepper.
- 10 check seasoning.
- 11 remove to a serving bowl.
- 12 serve cold or at room temperature.
