Greek Roll-up

Total Time: 5 mins Preparation Time: 5 mins

Ingredients

  • Servings: 2
  • 1/4 cup kalamata olive, chopped
  • 1/4 cup feta cheese, crumbled
  • 1 small cucumber, diced
  • 1 small red pepper, diced
  • 2 leaves romaine lettuce, chopped
  • 1/2 tomato, diced
  • 2 tablespoons sun-dried tomato pesto
  • 2 rosemary flavord flour tortillas (or any flavor)

Recipe

  • 1 mix first 6 ingredients together.
  • 2 spread 1 t pesto on 1 tortilla, repeat with 2nd tortilla.
  • 3 divide greek salad among tortillas and roll-up.
  • 4 slice in half and enjoy.
