Apricot Glazed Lamb Kabobs

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 lb boneless lamb loin, cut into one-inch cubes
  • 1 (10 ounce) jar apricot preserves
  • 1/2 teaspoon ground ginger
  • 4 tablespoons orange liqueur or 4 tablespoons orange juice
  • 2 tablespoons butter

Recipe

  • 1 stir together preserves, ginger, liqueur and butter, simmer in a small saucepan until butter is melted.
  • 2 place lamb cubes in heavy plastic bag, pour 3/4 cup apricot mixture over to coat. marinate at least 30 minutes. thread lamb onto 4-6 skewers that have been soaked in water for 60 minutes, grill over hot coals 10-12 minutes, turning occasionally and basting with marinade.
  • 3 heat remaining apricot sauce to boiling and serve alongside kabobs.
