Bacon And Mushroom Stir-fry

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 tablespoons sunflower oil
  • 6 slices bacon, trimmed and chopped (large pieces)
  • 4 large mushrooms, thickly sliced
  • 2 garlic cloves, crushed
  • 2 teaspoons gingerroot, peeled and grated
  • 4 scallions, trimmed and cut into 1in pieces
  • 8 cherry tomatoes, halved
  • 2 tablespoons soy sauce

Recipe

  • 1 heat the oil in a large pan or wok. add the bacon and stir-fry for 4 minutes, then add the mushrooms and stir-fry for a further 5 minutes until the bacon and mushrooms turn golden.
  • 2 add the garlic, ginger and scallions, and cook for another 2 minutes.
  • 3 add the tomatoes, and season. stir-fry for 3-4 minutes until soft, add the soy sauce. serve with rice or noodles.
