Braised Beef With Mushrooms

Ingredients

- 3 lbs boneless beef chuck roast
- 1 tablespoon vegetable oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 lb fresh mushrooms, halved
- 1 1/2 cups chopped onions
- 3 tablespoons minced garlic
- 1 1/4 cups beef broth
- 1 bay leaf
- 1 cup fresh peas or 1 cup frozen peas, thawed
- 1/2 cup sour cream
Recipe
- 1 heat oil in dutch oven, brown roast on all sides.
- 2 season with salt and pepper; remove from pan.
- 3 to pan add mushrooms and onion; saute for 2 minutes.
- 4 add garlic, broth and bay leaf; return roast to pan.
- 5 cover and simmer for 3 hours.
- 6 add peas and cook 10 more minutes.
- 7 remove roast to serving platter; stir in sour cream.
- 8 serve roast with sauce.
