Braised Beef With Mushrooms

Total Time: 3 hrs 10 mins Preparation Time: 10 mins Cook Time: 3 hrs

Ingredients

  • Servings: 8
  • 3 lbs boneless beef chuck roast
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 lb fresh mushrooms, halved
  • 1 1/2 cups chopped onions
  • 3 tablespoons minced garlic
  • 1 1/4 cups beef broth
  • 1 bay leaf
  • 1 cup fresh peas or 1 cup frozen peas, thawed
  • 1/2 cup sour cream

Recipe

  • 1 heat oil in dutch oven, brown roast on all sides.
  • 2 season with salt and pepper; remove from pan.
  • 3 to pan add mushrooms and onion; saute for 2 minutes.
  • 4 add garlic, broth and bay leaf; return roast to pan.
  • 5 cover and simmer for 3 hours.
  • 6 add peas and cook 10 more minutes.
  • 7 remove roast to serving platter; stir in sour cream.
  • 8 serve roast with sauce.
