Cheese Pita

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 1 lb phyllo dough (1 pkg.)
  • 1 lb cream cheese, or
  • 1 lb ricotta cheese
  • 3 eggs, beaten
  • 1 teaspoon salt
  • 1/2 lb butter, melted

Recipe

  • 1 thaw phyllo.
  • 2 preheat oven to 350 degrees.
  • 3 lay thawed phyllo on a flat surface and cover with damp tea towel.
  • 4 mix cheese, eggs and salt - set aside.
  • 5 on an 11" x 17" greased baking pan lay phyllo to cover.
  • 6 brush with melted butter.
  • 7 repeat until there are six layers.
  • 8 spread cheese filling evenly over phyllo, leaving about 1/2" around the edges.
  • 9 cover with phyllo brushed with butter.
  • 10 repeat until there are eight layers.
  • 11 tuck in egdes.
  • 12 brush top lightly with butter.
  • 13 bake until top browns, approximately 30 minutes.
