Cheese Pita

Ingredients
- Servings: 8
- 1 lb phyllo dough (1 pkg.)
- 1 lb cream cheese, or
- 1 lb ricotta cheese
- 3 eggs, beaten
- 1 teaspoon salt
- 1/2 lb butter, melted
Recipe
- 1 thaw phyllo.
- 2 preheat oven to 350 degrees.
- 3 lay thawed phyllo on a flat surface and cover with damp tea towel.
- 4 mix cheese, eggs and salt - set aside.
- 5 on an 11" x 17" greased baking pan lay phyllo to cover.
- 6 brush with melted butter.
- 7 repeat until there are six layers.
- 8 spread cheese filling evenly over phyllo, leaving about 1/2" around the edges.
- 9 cover with phyllo brushed with butter.
- 10 repeat until there are eight layers.
- 11 tuck in egdes.
- 12 brush top lightly with butter.
- 13 bake until top browns, approximately 30 minutes.
