Galician Soup ( Caldo Gallego )

Ingredients
- Servings: 4
- 2 (15 ounce) cans cannellini beans
- 6 cups water
- 1 small veal steak
- 1 small ham steak
- 1 small spanish chorizo
- 1 cup chopped collard greens
- 2 potatoes
- 1 yellow onion
- 3 garlic cloves
- 1 bay leaf
- 1 tablespoon cumin powder
- 1 tablespoon of spanish sweet paprika
- add salt & pepper
Recipe
- 1 cut veal and ham steaks into chunks.
- 2 mince onion and garlic
- 3 peel and cut potatoes into cubes.
- 4 skin and cut choizo into 1/4 inch round slices.
- 5 in a large soup pot
- 6 add the beans with their liquid.
- 7 then place all remaining ingredients.
- 8 mix well and let cook over low flame for about 3 hours.
- 9 serve in soup bowls with toated italian bread for dunking on the side.
