Galician Soup ( Caldo Gallego )

Total Time: 3 hrs 15 mins Preparation Time: 15 mins Cook Time: 3 hrs

Ingredients

  • Servings: 4
  • 2 (15 ounce) cans cannellini beans
  • 6 cups water
  • 1 small veal steak
  • 1 small ham steak
  • 1 small spanish chorizo
  • 1 cup chopped collard greens
  • 2 potatoes
  • 1 yellow onion
  • 3 garlic cloves
  • 1 bay leaf
  • 1 tablespoon cumin powder
  • 1 tablespoon of spanish sweet paprika
  • add salt & pepper

Recipe

  • 1 cut veal and ham steaks into chunks.
  • 2 mince onion and garlic
  • 3 peel and cut potatoes into cubes.
  • 4 skin and cut choizo into 1/4 inch round slices.
  • 5 in a large soup pot
  • 6 add the beans with their liquid.
  • 7 then place all remaining ingredients.
  • 8 mix well and let cook over low flame for about 3 hours.
  • 9 serve in soup bowls with toated italian bread for dunking on the side.
