Galician Soup (caldo Gallego)

Total Time: 3 hrs 10 mins Preparation Time: 10 mins Cook Time: 3 hrs

Ingredients

  • 1 lb haricot beans
  • 3 potatoes
  • ham bone
  • 1/2 ounce lard or 1/2 ounce dripping
  • 1 -2 beef bone
  • 1/2 ounce flour
  • 1 small cabbage
  • salt and pepper

Recipe

  • 1 soak the beans in water for some hours.
  • 2 put them in a saucepan with 2 qts. water and the bones; bring to the boil and simmer gently for about 3 hours.
  • 3 after 2 hours add the finely shredded cabbage, the peeled and quartered potatoes and the fat and flour, mixed; season to taste and simmer for a further hour.
