Garden Pasta Sauce

Ingredients

  • Servings: 15
  • 2 cups mushrooms, sliced
  • 1 1/2 medium carrots, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup onion, chopped
  • 1/4 cup green bell pepper, chopped
  • 1/4 cup red bell pepper, chopped
  • 2 garlic cloves, minced
  • 1/8 cup olive oil
  • 1 (28 ounce) can crushed tomatoes
  • 2 (8 ounce) cans tomato sauce
  • 0.5 (12 ounce) can tomato paste
  • 1/2 cup vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 3/4 teaspoon brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup parmesan cheese

Recipe

  • 1 saute mushrooms, carrots, celery, onions, green peppers, red peppers, and garlic in olive oil until tender.
  • 2 stir in the remaining ingredients.
  • 3 bring to a boil, reduce heat, cover, and simmer for one hour.
