Greek Meatball Soup

Ingredients
- Servings: 4
- 1 lb ground beef
- 3 eggs
- 1 cup uncooked rice
- 3/4 cup bread
- 1/4 cup butter
- lemon juice
Recipe
- 1 fill large pan with water.
- 2 add butter.
- 3 in a different bowl combined meat, 1 egg, rice & bread.
- 4 form meatballs.
- 5 add meatballs to water.
- 6 add additional rice if you like a thicker soup.
- 7 cook meatballs (time depends on size).
- 8 in a different bowl whip 2 egg whites until firm/peaks.
- 9 add yolks & lemon juice (to taste).
- 10 slowly add soup broth & blend with egg/lemon mixture.
- 11 slowly add more soup broth (about 3 cups total).
- 12 combine broth/egg/lemon mixture to pan with soup & allow to sit for 5 minutes.
- 13 soup will be frothy.
