Greek Meatball Soup

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 lb ground beef
  • 3 eggs
  • 1 cup uncooked rice
  • 3/4 cup bread
  • 1/4 cup butter
  • lemon juice

Recipe

  • 1 fill large pan with water.
  • 2 add butter.
  • 3 in a different bowl combined meat, 1 egg, rice & bread.
  • 4 form meatballs.
  • 5 add meatballs to water.
  • 6 add additional rice if you like a thicker soup.
  • 7 cook meatballs (time depends on size).
  • 8 in a different bowl whip 2 egg whites until firm/peaks.
  • 9 add yolks & lemon juice (to taste).
  • 10 slowly add soup broth & blend with egg/lemon mixture.
  • 11 slowly add more soup broth (about 3 cups total).
  • 12 combine broth/egg/lemon mixture to pan with soup & allow to sit for 5 minutes.
  • 13 soup will be frothy.
