Greek Mushrooms

Ingredients
- Servings: 4
- 2 lbs medium mushrooms
- 1 cup water
- 1 cup red wine vinegar
- 1 cup olive oil
- 2 bay leaves
- 1/4 teaspoon crushed thyme
- 1/2 teaspoon onion powder
- 2 garlic cloves
- 2 teaspoons salt
- 12 peppercorns
Recipe
- 1 clean and trim mushrooms.
- 2 bring all ingredients (except mushrooms) to a boil and simmer 5 minutes.
- 3 add mushrooms and simmer 10 minutes.
- 4 cool. may be served at room temperature or reheated.
- 5 best if made a day ahead.
