Gooseberry Fool

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1/2 pint vanilla custard
  • 6 ounces sugar
  • 1 lb of washed gooseberry
  • 2 tablespoons plain water
  • 1 tablespoon icing sugar (optional)

Recipe

  • 1 chill glasses or small bowls for serving.
  • 2 cook goosberries (until soft) with sugar and two tablespoons of water.
  • 3 tast for sweetness when cooked and add icing sugar to adjust to your taste.
  • 4 run through a fine strainer and mix in with custard.
  • 5 serve hot, or cold.
