Greek Potato Bake

Ingredients

- 1 1/2 lbs potatoes, peeled and quartered
- 6 sprigs thyme
- 2 garlic cloves, lightly crushed
- 7 ounces small tomatoes
- salt & freshly ground black pepper
- 2 tablespoons olive oil
- 7 tablespoons wine
Recipe
- 1 preheat the oven to 400°f
- 2 place the potatoes, thyme, garlic and tomatoes in a roasting tray. season with salt and freshly ground pepper.
- 3 pour over the olive oil and wine, mixing well.
- 4 cover the roasting tray with kitchen foil, sealing the edges well.
- 5 bake for 30 minutes until the tomatoes are pulpy and the potatoes are falling apart.
