Greek Potato Bake

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs potatoes, peeled and quartered
  • 6 sprigs thyme
  • 2 garlic cloves, lightly crushed
  • 7 ounces small tomatoes
  • salt & freshly ground black pepper
  • 2 tablespoons olive oil
  • 7 tablespoons wine

Recipe

  • 1 preheat the oven to 400°f
  • 2 place the potatoes, thyme, garlic and tomatoes in a roasting tray. season with salt and freshly ground pepper.
  • 3 pour over the olive oil and wine, mixing well.
  • 4 cover the roasting tray with kitchen foil, sealing the edges well.
  • 5 bake for 30 minutes until the tomatoes are pulpy and the potatoes are falling apart.
