Greek Souvlaki

Ingredients

  • Servings: 12
  • 1 lemon, juice of
  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 1 teaspoon dried oregano
  • 3 cloves garlic, crushed
  • 4 lbs lamb tenderloin, cut into 1 inch cubes
  • 2 medium yellow onions, cut into 1 inch pieces
  • 2 -3 green bell peppers or 2 -3 red bell peppers, cut into 1 inch pieces
  • skewer (i user metal skewers but if using wooden soak for 10 minutes in water so they do not burn)

Recipe

  • 1 in a large glass bowl, mix together lemon juice, olive oil, soy sauce, oregano, and garlic; add lamb, onions, and peppers, and stir to coat.
  • 2 cover, and refrigerate for 2 to 3 hours.
  • 3 the longer the marinade time the better!
  • 4 preheat grill for medium-high heat.
  • 5 thread lamb, peppers, and onions onto skewers.
  • 6 lightly oil grate.
  • 7 cook for 10 to 15 minutes, or to desired doneness, turning skewers frequently for even cooking.
