Greek Souvlaki

Ingredients

- 1 lemon, juice of
- 1/4 cup olive oil
- 1/4 cup soy sauce
- 1 teaspoon dried oregano
- 3 cloves garlic, crushed
- 4 lbs lamb tenderloin, cut into 1 inch cubes
- 2 medium yellow onions, cut into 1 inch pieces
- 2 -3 green bell peppers or 2 -3 red bell peppers, cut into 1 inch pieces
- skewer (i user metal skewers but if using wooden soak for 10 minutes in water so they do not burn)
Recipe
- 1 in a large glass bowl, mix together lemon juice, olive oil, soy sauce, oregano, and garlic; add lamb, onions, and peppers, and stir to coat.
- 2 cover, and refrigerate for 2 to 3 hours.
- 3 the longer the marinade time the better!
- 4 preheat grill for medium-high heat.
- 5 thread lamb, peppers, and onions onto skewers.
- 6 lightly oil grate.
- 7 cook for 10 to 15 minutes, or to desired doneness, turning skewers frequently for even cooking.
