Ingredients

- 2 large cucumbers
- 2 tablespoons cider vinegar
- 1 1/2 tablespoons sugar
- 1/2-1 teaspoon salt
- 1/4 teaspoon pepper
- 3/4 cup sour cream
- 2 tablespoons minced fresh parsley
Recipe
- 1 peel cucumbers and cut into very thin slices.
- 2 mix together vinegar, sugar, salt, and pepper and pour over cucumbers.
- 3 marinate about 20 minutes to an hour but no more than that; drain off liquid, toss cucumbers with sour cream, then top with fresh parsley and serve.
