Crepes Suzette

Ingredients

- 1 cup sifted all-purpose flour
- 1/4 teaspoon salt
- 2 tablespoons sugar
- 1/2 teaspoon cinnamon
- 1 cup milk
- 2 tablespoons melted butter
- 2 eggs, slightly beaten
- 1 cup apricot jam
- confectioners' sugar
Recipe
- 1 combine flour, salt, sugar, and cinnamon.
- 2 in another bowl, combine milk, melted butter and eggs.
- 3 stir into the flour mixture.
- 4 beat until smooth.
- 5 grease a 5 inch skillet.
- 6 heat it, then pour in 3 tbsp batter.
- 7 tilt pan quickly so batter covers bottom of pan.
- 8 cook until pancake is browned on bottom.
- 9 turn and brown on other side.
- 10 keep crepes warm on dish in a warm oven.
- 11 when all are made, place 2 tsps jam in centre of each crepe.
- 12 roll up.
- 13 dust with confectioners sugar and serve.
