Crepes Suzette

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 cup sifted all-purpose flour
  • 1/4 teaspoon salt
  • 2 tablespoons sugar
  • 1/2 teaspoon cinnamon
  • 1 cup milk
  • 2 tablespoons melted butter
  • 2 eggs, slightly beaten
  • 1 cup apricot jam
  • confectioners' sugar

Recipe

  • 1 combine flour, salt, sugar, and cinnamon.
  • 2 in another bowl, combine milk, melted butter and eggs.
  • 3 stir into the flour mixture.
  • 4 beat until smooth.
  • 5 grease a 5 inch skillet.
  • 6 heat it, then pour in 3 tbsp batter.
  • 7 tilt pan quickly so batter covers bottom of pan.
  • 8 cook until pancake is browned on bottom.
  • 9 turn and brown on other side.
  • 10 keep crepes warm on dish in a warm oven.
  • 11 when all are made, place 2 tsps jam in centre of each crepe.
  • 12 roll up.
  • 13 dust with confectioners sugar and serve.
