Garbanzo Pasta Salad

Ingredients

  • Servings: 4
  • 8 ounces san giorgio medium pasta shells, cooked, drained and rinsed with cold water and drained again
  • 1/4 cup onion, finely chopped
  • 1/4 cup parsley, finely chopped
  • 1/4 cup sliced pimiento (2 ounce jar)
  • 1 garlic clove, minced
  • 2 tablespoons red wine vinegar
  • 1/3 cup olive oil
  • 19 ounces chickpeas, drained and rinsed

Recipe

  • 1 place onion, parsley, pimento, garlic and vinegar in large bowl.
  • 2 mix together and let stand for 5 minutes.
  • 3 add all remaining ingredients and toss lightly until well blended.
  • 4 cover and refrigerate.
