Garden Greek Pasta Salad

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 4 cups cooked radiatore (nugget)
  • 2 cups thinly sliced cucumbers
  • 1 cup chopped red bell pepper (1 medium)
  • 1/2 cup red onion, sliced (1/2 small)
  • 1/4 cup kalamata olive, pitted and cut in half
  • 1/4 cup finely chopped fresh parsley
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 2 teaspoons chopped fresh oregano (1/2 t. dried oregano leaves)
  • 1/4 teaspoon salt
  • 1 (16 ounce) can kidney beans, rinsed and drained
  • 1/2 cup crumbled feta cheese

Recipe

  • 1 cook pasta according to package directions.
  • 2 mix all ingredients except feta cheese in large bowl.
  • 3 cover and refrigerate at least 1 hour to blend flavors.
  • 4 top with crumbled cheese.
