Garithes Me Ouzo: Flambéd Prawns With Ouzo

Ingredients
- Servings: 4
- 5 prawns, 1/4 pound each
- 1 cup carrot, coarsely grated
- 1 cup zucchini, coarsely grated
- 1/4 cup heavy cream
- 2 tablespoons ouzo
- 2 tablespoons olive oil
- 1/2 lemon
- sea salt, to taste
- fresh ground pepper, to taste
Recipe
- 1 clean and devein the prawns, leaving the head and tail intact.
- 2 in a heavy frying pan, heat the olive oil and sauté the prawns for 3 minutes. add carrots and zucchini and continue to sauté for 2 minutes more.
- 3 add the ouzo and light it.
- 4 when the flames go out, immediately add the cream, salt, and pepper.
- 5 stir until the sauce is blended and thickened.
- 6 remove from the heat .
- 7 season with salt and pepper to taste.
- 8 squeeze fresh lemon juice over top prior to serving, if desired.
- 9 serve hot over pasta with a nice green salad.
