Greek Shrimp With Orzo

Ingredients

- 12 ounces orzo pasta, uncooked
- 2 teaspoons olive oil
- 1/2 cup onion, chopped
- 1 medium green pepper, chopped
- 2 medium garlic cloves, minced
- 28 ounces diced tomatoes, diced
- 1 teaspoon dried oregano
- 1 lb medium shrimp, peeled and deveined
- 1/4 cup fresh basil, chopped
- 2 tablespoons feta cheese, crumbled
Recipe
- 1 cook orzo in salted water according to package directions without added fat.
- 2 drain and set aside.
- 3 meanwhile, heat oil in a large saucepan over medium heat.
- 4 add onion, pepper and garlic; cook until soft, stirring occasionally, about 3 minutes.
- 5 add tomatoes and oregano; bring to a simmer. add shrimp and cook until shrimp are bright pink and cooked through, about 5 minutes.
- 6 spoon cooked orzo into shrimp mixture; stir to combine.
- 7 remove from heat and stir in basil.
- 8 spoon about 1 1/4 cups of orzo-shrimp mixture onto each of six plates and top each with 1 teaspoon of feta.
