Greek Shrimp With Orzo

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 12 ounces orzo pasta, uncooked
  • 2 teaspoons olive oil
  • 1/2 cup onion, chopped
  • 1 medium green pepper, chopped
  • 2 medium garlic cloves, minced
  • 28 ounces diced tomatoes, diced
  • 1 teaspoon dried oregano
  • 1 lb medium shrimp, peeled and deveined
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons feta cheese, crumbled

Recipe

  • 1 cook orzo in salted water according to package directions without added fat.
  • 2 drain and set aside.
  • 3 meanwhile, heat oil in a large saucepan over medium heat.
  • 4 add onion, pepper and garlic; cook until soft, stirring occasionally, about 3 minutes.
  • 5 add tomatoes and oregano; bring to a simmer. add shrimp and cook until shrimp are bright pink and cooked through, about 5 minutes.
  • 6 spoon cooked orzo into shrimp mixture; stir to combine.
  • 7 remove from heat and stir in basil.
  • 8 spoon about 1 1/4 cups of orzo-shrimp mixture onto each of six plates and top each with 1 teaspoon of feta.
