Greek Style Stuffed Mushrooms

Ingredients
- 20 large button mushrooms
- 3 sausage links
- 1 tablespoon butter
- 1/2 onion, chopped small
- 1 cup greek yogurt
- 1 cup feta cheese
- 2 cups sauted spinach with garlic and lemons
- salt
- pepper
- 1/2 cup panko breadcrumbs
- parmesan cheese
- olive oil
Recipe
- 1 take stems off of mushrooms, cut up the stems.
- 2 cook sausage in butter, when fully cooked add onions, and stems. cook till onions are transluscent.
- 3 add sausage mixture to bowl, and add yogurt, feta cheese, spinach, salt, pepper and bread crumbs.
- 4 preheat oven to 400 degrees.
- 5 in large sheet pan arrange mushrooms close together and sprinkle with olive oil, stuff mushrooms with mixture, and sprinkle with parmensan cheese. sprinkle top with more olive oil.
- 6 bake for about 40 minutes or till mushrooms are soft and top is nicely browned.
