Gnocchi With Cottage Cheese & Bacon

Ingredients
- Servings: 6
- 2 lbs potato gnocchi
- 1 lb cottage cheese
- 1 lb bacon
- salt (optional)
- fresh ground black pepper (optional)
Recipe
- 1 prepare the gnocchi, according to package directions.
- 2 while gnocchi is cooking, fry the pound of bacon in a skillet.
- 3 drain the bacon on paper towels and pat to remove excess grease.
- 4 cut or break (depending on how crispy you like your bacon) the bacon into 1-inch pieces.
- 5 drain the gnocchi and put back into boiling pot.
- 6 add cottage cheese and mix well.
- 7 add bacon pieces last to maintain crispness.
- 8 salt and pepper to taste, if desired.
- 9 leftovers can be heated in a pan with a little butter.
