Gnocchi With Cottage Cheese & Bacon

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 2 lbs potato gnocchi
  • 1 lb cottage cheese
  • 1 lb bacon
  • salt (optional)
  • fresh ground black pepper (optional)

Recipe

  • 1 prepare the gnocchi, according to package directions.
  • 2 while gnocchi is cooking, fry the pound of bacon in a skillet.
  • 3 drain the bacon on paper towels and pat to remove excess grease.
  • 4 cut or break (depending on how crispy you like your bacon) the bacon into 1-inch pieces.
  • 5 drain the gnocchi and put back into boiling pot.
  • 6 add cottage cheese and mix well.
  • 7 add bacon pieces last to maintain crispness.
  • 8 salt and pepper to taste, if desired.
  • 9 leftovers can be heated in a pan with a little butter.
