Earl Grey Soaked Raisin Cake

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • Servings: 8
  • 2 cups strong earl grey tea, warmed
  • 180 g raisins
  • 170 g soft butter
  • 170 g brown sugar
  • 3 eggs, beaten
  • 285 g plain flour
  • 2 teaspoons baking powder

Recipe

  • 1 combine tea and raisins, stand for 10 minutes.
  • 2 strain, reserve liquid.
  • 3 combine butter and sugar in pan and melt over a medium heat.
  • 4 pour into large bowl and add 2 tblsp of reserved liquid.
  • 5 cool then add eggs, combine well.
  • 6 sift over flour, baking powder and a pinch of salt.
  • 7 stir through drained raisins.
  • 8 pour batter into well greased and floured 26 cm bundt tin.
  • 9 bake 180 f for 40 minutes.
  • 10 turn onto wire rack and cool.
