Earl Grey Soaked Raisin Cake

Ingredients
- Servings: 8
- 2 cups strong earl grey tea, warmed
- 180 g raisins
- 170 g soft butter
- 170 g brown sugar
- 3 eggs, beaten
- 285 g plain flour
- 2 teaspoons baking powder
Recipe
- 1 combine tea and raisins, stand for 10 minutes.
- 2 strain, reserve liquid.
- 3 combine butter and sugar in pan and melt over a medium heat.
- 4 pour into large bowl and add 2 tblsp of reserved liquid.
- 5 cool then add eggs, combine well.
- 6 sift over flour, baking powder and a pinch of salt.
- 7 stir through drained raisins.
- 8 pour batter into well greased and floured 26 cm bundt tin.
- 9 bake 180 f for 40 minutes.
- 10 turn onto wire rack and cool.
