- 3 cups spinach
- 1 onion (sliced)
- 1 tomato (sliced)
- 2 tablespoons olive oil
- salt and pepper
- 1 potato (small pieces)
- grated cheese

- 1 1. put tender parts of the cucuzza plant into a pot of plain water (tough parts good for flavor and can be removed when your soup is

- 5 4. after 20 min or so, add potato cut in pieces and cook until done. finish with a robust amount of olive oil. adjust seasonings and serve with parmigiano-reggiano for grating at the table.
