Devilled Chicken

Ingredients

- 8 chicken thighs
- 2 tablespoons sugar
- 1 tablespoon ground ginger
- 1 tablespoon english mustard powder
- 1 tablespoon curry powder
- 2 ounces butter
- 2/3 cup tomato ketchup
- 1 tablespoon curry sauce
- 2 tablespoons soy sauce
Recipe
- 1 place the chicken portions on a board.
- 2 mix the sugar, ginger, mustard and curry powder together.
- 3 rub well into the surface of the chicken. leave for 2 hours.
- 4 arrange the chicken on a grid in 2 roasting pans.
- 5 melt the butter and brush all over the chicken.
- 6 bake in a preheated moderately hot oven, 400°f for 30 minutes, until golden brown.
- 7 mix the ketchup and sauces together and brush over the chicken portions.
- 8 return to the oven for 10 minutes.
- 9 arrange on a warmed serving dish and serve immediately.
