Grilled Squid With Red Wine Sauce

Total Time: 27 mins Preparation Time: 10 mins Cook Time: 17 mins

Ingredients

  • Servings: 4
  • 1/2 cup olive oil
  • 4 tablespoons minced fresh cilantro
  • 5 cloves garlic, minced
  • 1 lb squid, cleaned,tentacles reserved
  • 2 red bell peppers or 2 green bell peppers, chopped
  • 1 large tomato, chopped
  • 1/2 cup dry red wine

Recipe

  • 1 whisk together ¼ cup of oil, 2 tblsps cilantro and half of garlic in a small bowl.
  • 2 using kitchen shears, cut squid bodies down one long side; open flat.
  • 3 using sharp knife, lightly score squid.
  • 4 arrange in large, shallow baking dish in single layer.
  • 5 pour garlic mixture over.
  • 6 let marinate atleast 3 hours or overnight.
  • 7 prepare grill (medium-high heat).
  • 8 heat ¼ cup oil in heavy, large skillet over medium heat.
  • 9 add vegetables, remaining garlic and tentacles.
  • 10 simmer until vegetables are tender, about 15 minutes.
  • 11 season.
  • 12 add 2 tblsps cilantro.
  • 13 grill marinated squid just until opaque, about 45 seconds per side.
  • 14 divide sauce among plates.
  • 15 top with squid.
