Chocolate Banana Pie

Ingredients

- 3 1/2 ounces dark chocolate
- 6 ounces butter
- 8 ounces graham crackers, crushed
- 7 ounces cream cheese
- 2 ripe bananas
- 1 teaspoon lemon juice
- 2 ounces superfine sugar
- 2 eggs
- 1 1/2 ounces self raising flour
- 1/2 teaspoon vanilla essence
- 3 1/2 ounces dark chocolate
- 9 1/2 tablespoons heavy cream
- 1 firm banana
- lemon juice
Recipe
- 1 melt the chocolate with the butter, stir in crushed crackers.
- 2 press crust into a 9in flan tin. bake at 350°f for 15 minutes.
- 3 meanwhile, beat cheese until smooth, then beat in squashed bananas, lemon juice, sugar, eggs, flour and essence, continuing until smooth and thick.
- 4 pour filling onto crust, bake for a further 30-35 minutes until firm; cool.
- 5 for the topping:.
- 6 slowly melt chocolate in the cream then cool slightly before pouring over the pie.
- 7 chill until required. decorate with banana slices dipped in lemon juice.
