French Potato Salad

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 12 new potatoes (or more)
  • 1 cup finely chopped green onion
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 4 tablespoons olive oil
  • 1 tablespoon wine vinegar
  • 1/4 cup chopped parsley
  • 1 teaspoon chopped chives

Recipe

  • 1 cook new potatoes in peel, & peel while warm.
  • 2 cut into bit-size pieces.
  • 3 toss while warm with onions, salt, pepper, & olive oil.
  • 4 add vinegar.
  • 5 toss again & cool at room temperature, not in refrigerator.
  • 6 just before serving, toss again & add parsley & chives.
