Glazed New Potatoes

Ingredients
- Servings: 4
- 1 lb new potato
- 7/8 cup chicken stock
- 8 tablespoons extra virgin olive oil
- 4 tablespoons red wine vinegar
- 1 tablespoon chopped chives
Recipe
- 1 wash and slice each potato in half. put them in a saucepan with the chicken stock, the olive oil and 3 tablespoons of the vinegar.
- 2 bring to the boil and boil hard until the liquid has all but evaporated and the potatoes are glossy.
- 3 sprinkle over the remaining vinegar, season with salt and pepper and scatter over the chives.
