Glazed New Potatoes

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 lb new potato
  • 7/8 cup chicken stock
  • 8 tablespoons extra virgin olive oil
  • 4 tablespoons red wine vinegar
  • 1 tablespoon chopped chives

Recipe

  • 1 wash and slice each potato in half. put them in a saucepan with the chicken stock, the olive oil and 3 tablespoons of the vinegar.
  • 2 bring to the boil and boil hard until the liquid has all but evaporated and the potatoes are glossy.
  • 3 sprinkle over the remaining vinegar, season with salt and pepper and scatter over the chives.
