Chicken, Spinach And Mushroom Quiche

Ingredients

- 2 boneless skinless chicken breasts
- 1 medium onion, cut in quarters
- 1/2 cup wine
- 1/2 cup chicken broth
- 2 tablespoons fresh lemon juice
- 1 sprig fresh basil
- 3 eggs (or 3/4 cup egg beaters)
- 1 1/2 cups milk
- 1 cup shredded cheese swiss cheese or 1 cup gruyere cheese
- 10 ounces frozen spinach, thawed and drained
- 4 ounces fresh shiitake mushrooms, diced
- 1 frozen pie crust, thawed
Recipe
- 1 preheat oven to 325 degree
- 2 place onions in saucepan, top with chicken and basil and cover with wine, lemon juice, and chicken broth
- 3 bring to boil, reduce heat and poach 12 minutes
- 4 remove chicken from pan, allow to cool and dice
- 5 beat eggs and milk together
- 6 spread chicken, cheese, msuhrooms, and spinach in pie shell
- 7 pour egg mixture into pie shell
- 8 bake for 20 minutes (until top is golden and center is set)
