Chicken, Spinach And Mushroom Quiche

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 boneless skinless chicken breasts
  • 1 medium onion, cut in quarters
  • 1/2 cup wine
  • 1/2 cup chicken broth
  • 2 tablespoons fresh lemon juice
  • 1 sprig fresh basil
  • 3 eggs (or 3/4 cup egg beaters)
  • 1 1/2 cups milk
  • 1 cup shredded cheese swiss cheese or 1 cup gruyere cheese
  • 10 ounces frozen spinach, thawed and drained
  • 4 ounces fresh shiitake mushrooms, diced
  • 1 frozen pie crust, thawed

Recipe

  • 1 preheat oven to 325 degree
  • 2 place onions in saucepan, top with chicken and basil and cover with wine, lemon juice, and chicken broth
  • 3 bring to boil, reduce heat and poach 12 minutes
  • 4 remove chicken from pan, allow to cool and dice
  • 5 beat eggs and milk together
  • 6 spread chicken, cheese, msuhrooms, and spinach in pie shell
  • 7 pour egg mixture into pie shell
  • 8 bake for 20 minutes (until top is golden and center is set)
