Boiled Bacon With Parsley Sauce (fresh Ham)

Ingredients

  • Servings: 6
  • 3 lbs fresh ham
  • 2 medium onions, skinned
  • 2 medium carrots, thickly sliced
  • 2 celery ribs, chopped
  • 1 bay leaf
  • 4 black peppercorns
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk
  • salt & freshly ground black pepper
  • 2 tablespoons fresh parsley, chopped

Recipe

  • 1 place the ham in a large pot or dutch oven and cover with cold water; bring to a boil over medium high heat.
  • 2 remove ham and drain water (you are trying to remover salt).
  • 3 return ham to pot along with onions, carrots, celery, bay leaf and peppercorns; cover with cold water and bring to a boil over medium high heat.
  • 4 skim surface with a slotted spoon, cover, reduce heat, and cook 1 hour and 20 minutes.
  • 5 meanwhile, make the parsley sauce by whisking the butter, flour, and milk in a saucepan, over medium heat, until thickened and smooth, about 1 to 2 minutes; season with salt and pepper and add parsley.
  • 6 once the meat is done, remove the rind (skin) and excess fat; slice.
  • 7 serve the sliced meat with the parsley sauce.
