Boiled Bacon With Parsley Sauce (fresh Ham)

Ingredients

- 3 lbs fresh ham
- 2 medium onions, skinned
- 2 medium carrots, thickly sliced
- 2 celery ribs, chopped
- 1 bay leaf
- 4 black peppercorns
- 2 tablespoons butter
- 2 tablespoons flour
- 1 cup milk
- salt & freshly ground black pepper
- 2 tablespoons fresh parsley, chopped
Recipe
- 1 place the ham in a large pot or dutch oven and cover with cold water; bring to a boil over medium high heat.
- 2 remove ham and drain water (you are trying to remover salt).
- 3 return ham to pot along with onions, carrots, celery, bay leaf and peppercorns; cover with cold water and bring to a boil over medium high heat.
- 4 skim surface with a slotted spoon, cover, reduce heat, and cook 1 hour and 20 minutes.
- 5 meanwhile, make the parsley sauce by whisking the butter, flour, and milk in a saucepan, over medium heat, until thickened and smooth, about 1 to 2 minutes; season with salt and pepper and add parsley.
- 6 once the meat is done, remove the rind (skin) and excess fat; slice.
- 7 serve the sliced meat with the parsley sauce.
