Cherry And Kirsch Clafoutis

Total Time: 1 hr 15 mins Preparation Time: 30 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 3 cups fresh cherries or 3 cups canned cherries, drained
  • 1/4 cup kirsch
  • 1 teaspoon lemon zest, finely grated
  • 1 tablespoon butter, softened
  • 1 cup whole milk
  • 1/3 cup caster sugar
  • 3 eggs
  • 3 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup plain flour
  • icing sugar, to serve

Recipe

  • 1 preheat oven to 180c or 356f.
  • 2 combine the cherries, kirsch and lemon and let stand for a 1/2 hour.
  • 3 grease a 20cm or 8 in round baking dish with the softened butter.
  • 4 place the milk, sugar, eggs, vanilla, salt and flour into a blender and blend for 1 minute.
  • 5 pour the mixture into the dish then spoon over the cherries and juice.
  • 6 bake for about 45 minutes or until puffed and golden.
  • 7 dust liberally with icing sugar, serve hot.
