Chrissy's Mediterranean Chicken

Ingredients
- Servings: 4
- 4 boneless chicken breasts, sliced lengthwise to create a pocket for the stuffing
- salt & pepper
- 14 ounces diced tomatoes
- 6 ounces artichoke hearts, quartered
- 8 ounces kalamata olives, pitted and halved
- 1/2 cup feta cheese, crumbled
- mediterranean herbs
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cups baby spinach
Recipe
- 1 preheat oven to 375.
- 2 pound breasts.
- 3 sprinkle with salt/pepper and herbs.
- 4 place each one on foil or parchment paper square.
- 5 chop and mix remaining ingredients in a bowl.
- 6 stuff chicken with mixture.
- 7 stuff a handful of baby spinach in each breast.
- 8 poured some lemon juice and some of the olive juice over the chicken
- 9 wrap up breast in foil/parchment square
- 10 place in baking dish and bake 20-23 minutes.
- 11 enjoy over rice -- tasty!
