Chrissy's Mediterranean Chicken

Total Time: 38 mins Preparation Time: 15 mins Cook Time: 23 mins

Ingredients

  • Servings: 4
  • 4 boneless chicken breasts, sliced lengthwise to create a pocket for the stuffing
  • salt & pepper
  • 14 ounces diced tomatoes
  • 6 ounces artichoke hearts, quartered
  • 8 ounces kalamata olives, pitted and halved
  • 1/2 cup feta cheese, crumbled
  • mediterranean herbs
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cups baby spinach

Recipe

  • 1 preheat oven to 375.
  • 2 pound breasts.
  • 3 sprinkle with salt/pepper and herbs.
  • 4 place each one on foil or parchment paper square.
  • 5 chop and mix remaining ingredients in a bowl.
  • 6 stuff chicken with mixture.
  • 7 stuff a handful of baby spinach in each breast.
  • 8 poured some lemon juice and some of the olive juice over the chicken
  • 9 wrap up breast in foil/parchment square
  • 10 place in baking dish and bake 20-23 minutes.
  • 11 enjoy over rice -- tasty!
