Crock Pot Beef Bourguignon

Ingredients
- Servings: 4
- 1 cup dry red wine
- 2 tablespoons olive oil
- 1 large onion, sliced
- 1/2 teaspoon thyme
- 2 tablespoons parsley, chopped
- 1 bay leaf
- 1/4 teaspoon pepper
- 2 lbs stewing beef, cut in 1 1/2 inch cubes
- 3 slices bacon, diced (pref thick cut)
- 12 small onions
- 2 garlic cloves, minced
- 1 teaspoon salt
Recipe
- 1 combine first 7 ingredients, mix well; add beef.
- 2 marinate at least 3 hours or over night.
- 3 drain meat; reserve marinade.
- 4 in skillet sauté bacon; remove.
- 5 brown meat in bacon fat.
- 6 place beef, bacon, vegetables, and seasonings in crock pot.
- 7 pour over enough marinade to cover.
- 8 cook on low 8-10 hours.
