Crock Pot Beef Bourguignon

Total Time: 8 hrs 20 mins Preparation Time: 20 mins Cook Time: 8 hrs

Ingredients

  • Servings: 4
  • 1 cup dry red wine
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 1/2 teaspoon thyme
  • 2 tablespoons parsley, chopped
  • 1 bay leaf
  • 1/4 teaspoon pepper
  • 2 lbs stewing beef, cut in 1 1/2 inch cubes
  • 3 slices bacon, diced (pref thick cut)
  • 12 small onions
  • 2 garlic cloves, minced
  • 1 teaspoon salt

Recipe

  • 1 combine first 7 ingredients, mix well; add beef.
  • 2 marinate at least 3 hours or over night.
  • 3 drain meat; reserve marinade.
  • 4 in skillet sauté bacon; remove.
  • 5 brown meat in bacon fat.
  • 6 place beef, bacon, vegetables, and seasonings in crock pot.
  • 7 pour over enough marinade to cover.
  • 8 cook on low 8-10 hours.
