Easy Dublin Coddle

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 10
  • 2 lbs potatoes
  • 2 lbs onions
  • 1 lb lamb sausage or 1 lb kielbasa
  • 1/2 lb ham or 1/2 lb crumbled bacon
  • 2 cups chicken stock
  • 1/4 teaspoon grated nutmeg
  • 2 tablespoons butter

Recipe

  • 1 melt butter in 3-quart pot or a medium wok.
  • 2 slice onions thinly, peel and cube potatoes, cut meat into bite sized pieces.
  • 3 lightly brown onions.
  • 4 add all other ingredients; bring to a boil, reduce heat, simmer until potatoes are tender.
  • 5 pour off excess broth (i keep it to make soup later) and serve with the mustard.
