Easy Gazpacho

Total Time: 15 mins Preparation Time: 15 mins

Ingredients

  • Servings: 6
  • 3 (14 ounce) cans petite diced tomatoes
  • 1 (4 ounce) can chopped green chilies
  • 2 garlic cloves, minced
  • 2 cups diced cucumbers, peeled and seeds removed
  • 1 cup diced celery
  • 1 cup diced green onion
  • 1 tablespoon chili powder
  • 2 tablespoons red wine vinegar
  • 1/4 cup extra virgin olive oil

Recipe

  • 1 combine all in large bowl.
  • 2 using immersion blender, blend to desired consistency. or using regular blender, place half of ingredients in blender, blend and return to remaining ingredients.
