Eggs With Tomatoes -- Avgha Me Tomatoes

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 3
  • 1/2 cup olive oil
  • 1 medium onion, diced
  • 1 1/2 lbs tomatoes, peeled and sliced
  • 1 teaspoon sugar
  • 6 eggs
  • salt
  • fresh ground black pepper

Recipe

  • 1 heat oil in a large frying pan. add the onion and cook until soft.
  • 2 add tomatoes, salt, pepper and sugar. simmer for 30 minutes or until tomatoes are soft.
  • 3 add the eggs to tomato mixture one at a time, trying not to crack the yolk. cover and cook for about 3 to 4 minutes.
