Garlic Soup (sopa De Ajo)

Ingredients
- Servings: 6
- 1/2 cup olive oil
- 3 tablespoons garlic, minced (you may add more if wished)
- 3 cups cubed day old bread
- 1 tablespoon salt (or to your own taste)
- 1 teaspoon paprika
- 1/8 teaspoon cayenne pepper
- 2 eggs
- 1 -2 tablespoon of chopped parsley
Recipe
- 1 in a pot pour the oil and heat over medium heat. once hot add in garlic for about 2.3 minutes, then the bread cubes, cook til golden brown, stirring occasionally.
- 2 add salt, paprika, cayenne pepper and 6 cups of water, bring to a boil, then reduce to low heat, cover and let simmer for 30 minutes.
- 3 in a small bowl beat eggs, stir in the parsley, rapidly stir into bread mixture,.
- 4 stirring constantly, til eggs are just set.
- 5 serve in soup bowls you may garnish with a little fresh chopped parsley if wished.
