Garlic Soup (sopa De Ajo)

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1/2 cup olive oil
  • 3 tablespoons garlic, minced (you may add more if wished)
  • 3 cups cubed day old bread
  • 1 tablespoon salt (or to your own taste)
  • 1 teaspoon paprika
  • 1/8 teaspoon cayenne pepper
  • 2 eggs
  • 1 -2 tablespoon of chopped parsley

Recipe

  • 1 in a pot pour the oil and heat over medium heat. once hot add in garlic for about 2.3 minutes, then the bread cubes, cook til golden brown, stirring occasionally.
  • 2 add salt, paprika, cayenne pepper and 6 cups of water, bring to a boil, then reduce to low heat, cover and let simmer for 30 minutes.
  • 3 in a small bowl beat eggs, stir in the parsley, rapidly stir into bread mixture,.
  • 4 stirring constantly, til eggs are just set.
  • 5 serve in soup bowls you may garnish with a little fresh chopped parsley if wished.
