Country Chicken Casserole

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 4 chicken breasts
  • 1 green pepper, skinned, de-seeded and sliced
  • 4 1/2 ounces button mushrooms
  • 1 tablespoon all-purpose flour
  • 2 tablespoons tomato paste
  • 14 ounces chopped tomatoes
  • 2/3 cup chicken stock
  • 1 tablespoon dried herbs
  • 1/2 teaspoon tabasco sauce
  • salt and pepper

Recipe

  • 1 heat the oil in a flameproof casserole, add the chicken and fry until lightly browned on all sides.
  • 2 remove the chicken from the pan with a slotted spoon. set aside.
  • 3 add the vegetables to the pan and fry for 5 minutes or until softened.
  • 4 stir in the flour and gradually add the remaining ingredients, including the chicken, stirring thoroughly.
  • 5 bring to the boil, cover and simmer gently for 40 minutes, stirring occasionally.
  • 6 serve.
