Country Chicken Casserole

Ingredients

- 4 chicken breasts
- 1 green pepper, skinned, de-seeded and sliced
- 4 1/2 ounces button mushrooms
- 1 tablespoon all-purpose flour
- 2 tablespoons tomato paste
- 14 ounces chopped tomatoes
- 2/3 cup chicken stock
- 1 tablespoon dried herbs
- 1/2 teaspoon tabasco sauce
- salt and pepper
Recipe
- 1 heat the oil in a flameproof casserole, add the chicken and fry until lightly browned on all sides.
- 2 remove the chicken from the pan with a slotted spoon. set aside.
- 3 add the vegetables to the pan and fry for 5 minutes or until softened.
- 4 stir in the flour and gradually add the remaining ingredients, including the chicken, stirring thoroughly.
- 5 bring to the boil, cover and simmer gently for 40 minutes, stirring occasionally.
- 6 serve.
