Garlic Greek Style Spaghetti

Ingredients
- Servings: 4
- 1 lb spaghetti
- 4 tablespoons butter
- 2 -3 garlic cloves, minced (more if you like)
- 3 ounces goat cheese (chevre, 1 small package)
- 4 ounces feta cheese, cubed
- 8 ounces diced tomatoes (or 1 can if fresh not available)
- 1/4 teaspoon red pepper flakes
- salt and pepper (the feta is pretty salty, taste before seasoning)
- 1 tablespoon chopped parsley
- 2 tablespoons capers, drained
- 1/4 cup chopped kalamata olive
Recipe
- 1 melt butter in large saute pan over medium low heat until melted.
- 2 in meantime, boil spaghetti until just underdone (mine takes about 8 minutes), drain (reserve some of the water, about 1/2 cup) and set aside.
- 3 add garlic and saute until lightly brown, careful not to burn.
- 4 add cheeses and tomatoes and red pepper and stir to combine and slightly cook the tomatoes.
- 5 add cooked pasta and stir to combine.
- 6 add reserved pasta water if too thick.
- 7 if desired, capers and or olives can be used as well for a little change (hey, it's your food, do what you like :).
- 8 garnish if if desired with chopped parsley,.
