Garlic Greek Style Spaghetti

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 lb spaghetti
  • 4 tablespoons butter
  • 2 -3 garlic cloves, minced (more if you like)
  • 3 ounces goat cheese (chevre, 1 small package)
  • 4 ounces feta cheese, cubed
  • 8 ounces diced tomatoes (or 1 can if fresh not available)
  • 1/4 teaspoon red pepper flakes
  • salt and pepper (the feta is pretty salty, taste before seasoning)
  • 1 tablespoon chopped parsley
  • 2 tablespoons capers, drained
  • 1/4 cup chopped kalamata olive

Recipe

  • 1 melt butter in large saute pan over medium low heat until melted.
  • 2 in meantime, boil spaghetti until just underdone (mine takes about 8 minutes), drain (reserve some of the water, about 1/2 cup) and set aside.
  • 3 add garlic and saute until lightly brown, careful not to burn.
  • 4 add cheeses and tomatoes and red pepper and stir to combine and slightly cook the tomatoes.
  • 5 add cooked pasta and stir to combine.
  • 6 add reserved pasta water if too thick.
  • 7 if desired, capers and or olives can be used as well for a little change (hey, it's your food, do what you like :).
  • 8 garnish if if desired with chopped parsley,.
